Barbaresco by the Glass | Dinner in Beacon

CASCINA LUISIN | BARBARESCO 'PAOLIN' 2016 
BY THE GLASS THIS WEEK FOR DINNER

It's cold outside, it's cozy in here.  Come drink Barbaresco at Homespun this weekend!

In Italy, there are 3B's in Italian wine, Brunello, Barolo & Barbaresco.  And nothing against Tuscany, but for me, nothing matches the transformative power and grace of Nebbiolo from the villages of Barolo and its neighbor, Barbaresco.  

While these regions are sitting pretty now, with international recognition as a fine wine region and all the accolades and capital that come along with that, it was not so many generations ago that the Piedmont was an area of poor subsistence farming.  One of the reasons, I have been told, as to why Nebbiolo has such a long maceration time in barrel is because traditionally, after the grapes were in from the field and crushed, there was so much other farm work to do, you did not mess with the barrels until you absolutely needed to, which was in the springtime.   So there the wine would sit, over winter, in the cellar, on the skins, in large oak botte, developing all the ethereal flavors we know and love about Barbaresco.

 There is something about opening a bottle of Barbaresco that makes it always seem like an event.   It is one of those regions that reminds me that you don't need a special occasion to open a great wine, opening the wine creates a special occasion.

This weekend,  we are opening Cascina Luisin's 2016 'Paolin' bottling.  'Cascina' means 'little farmhouse' and 'Luisin' is Piemontese dialect translating to 'Little Luigi'.  This is a wine that is harvested by hand, fermented in large concrete, and then aged in large Slavonian oak Stockinger barrels.  The wine shows just why the critics love the 2016 vintage in the Piedmont, notes of oolong tea, wild mushroom stock, Maraschino cherries, and rose petal bound from the glass, underscored by a keen mineral tension that ties the whole thing together.   So come by this weekend for dinner, and pretend you've snuck away to Little Luigi's Farmhouse in the Piedmontese countryside, we promise won't tell anyone where you went.

We had a lot of meetings about this this past week.  One question was central, last week was big, but now we're in trouble, we painted ourselves in a corner.  How, do we, a small local restaurant, top a free pretzel?  After a few long nights, the answer came to us, like an apparition-- a free cookie, no, a free CHOCOLATE CHIP cookie!  That's right, for folks dining in, we are doling out free chocolate chip cookies, plus a ten percent discount on your lunch today, for Beacon/Hudson Valley locals.  That's good reason to come see us, and we'll worry about next week, next week.

SUNDAY WINEMAKER TAKEOVER with Kalchē, Revel Cider, and Wild Arc Farm

CAMERON | PINOT NOIR 'ABBEY RIDGE' 2018 
BY THE GLASS THIS WEEK FOR DINNER

Cameron is one of my favorite growers in Oregon.  The wines are not everywhere, they're sort of difficult to find, and the only reason I ever came to know about them was from asking my friend Bill Fitch, who is the longtime wine director for Vinegar Hill House in DUMBO, "who do you like in Oregon?"  Bill lived in Portland for a long time, and with no hesitation said, "Cameron is great".  I had never heard of them, and had to do some legwork to see where I could even find a bottle to try, much less buy for the restaurant.  Cameron is different because they have a long held trust in the land and in the farming, and they also do not irrigate the vines, so each vintage is different, and the vines have struggled over time, digging their roots deep into the soil looking for water, and in a Darwinian sense, the vines that are somehow apt to survive in dry years are the ones that have survived over time, and the fruit they give is exceptional, with the personality of place.

Tonight we are pouring their 2018 'Abbey Ridge' Pinot Noir, from what Cameron believes is the most beautiful and expressive vineyard in the state.  This is a rare chance to try this wine, and we hope you can come on by for dinner this weekend.  Menu for dinner this weekend is below.

SUNDAY * Winemaker Takeover
We are really excited to have Kathline Chery of Kalchē Wine Co, Tariq Ahmed from Revel Cider, and Todd Cavallo from Wild Arc Farm here to pour their ciders, wines, and co-ferments for our guests.  Sunday, we will have special selection of their wines for our by the glass menu, with the winemakers in house to pour the wines and chat with you!  All these great people are in town for Peripheral, the natural wine fair taking place in Hudson, NY tomorrow at Kitty's .

This event will take place from 12-3pm on Sunday.

LOCALS LUNCH * EVERY MONDAY

Every Monday, we will be open for lunch, and we will offer a small thank you to our guests in the community who help us to keep plugging along and doing this thing we love to do.  

We hope this will turn into a happening each week where you can come in and see the friendly familiar faces of your neighbors and pals, and also meet new people who live in your community.  

At their best, restaurants can become Third Spaces, as writer Ray Oldenburg wrote about in his book The Great Good Place

Writer Alexander Song sums up this concept really well--

The concept of the “third space” was first introduced in 1989 in the book The Great Good Place, by Ray Oldenburg as social hubs in the community. Compared to first place (home) and second place (work), third places exist as a place to relax. They are often cited by community builders as an anchor or community life and serves to foster civil society, democracy, civic engagement, and establishing feelings of a sense of place.

Check back this Monday to see the deal for this week--  We really do hope to be able to offer more hours down the road, but for right now this tightening of hours is helping us through.  The best thing we can all do to get us open more is to come out and support, we hope to get back there soon!


CHANIN WINE CO | PINOT NOIR 'LA RINCONADA' 2013 
BY THE GLASS THIS WEEK FOR DINNER


Some years ago, I wandered into Blanc et Rouge, a really great wine shop in DUMBO, and was looking at all their selections.  As I write this, I remember I was there because I had heard they had a few bottles of 1986 Chateau Simone Palette Rouge that they bought from Robert Chadderdon.  Well that wine was long gone, but as I looked around the shop, I was taken by the label of a domestic pinot noir, and ended up grabbing the bottle and taking it home.  I opened it a weeks later, and was blown away.  This did-- and did not-- taste like wine from California.  It was not the bombastic alcohol and ripeness levels that we often see, there was not an overt use of new oak, the wine didn't feel like it was trying to hide anything or to be anything it wasn't.  This was my introduction to Gavin Chanin's wines, and I have been happy to stock them wherever I have been ever since.

I had the good fortune to visit Gavin in Santa Barbara a few years back.  He got into making wine while he was studying art at UCLA, and would take breaks to go and help out the legend Jim Clendenen at Au Bon Climat and Bob Lindquist at Qupé.   Gavin got the wine bug, and started his own label in 2007, using Jim's facilities at Au Bon Climat.  Gavin has a big respect for place and how minute changes in soil type, exposition and proximity to the cold air of the Pacific can effect the grapes and resulting wine.  This is why he chooses to produce a small amount of single vineyard bottlings, rather than blending everything together to make one wine.  My favorite wines from Gavin are his Los Alamos, Sanford & Benedict, and tonight's by the glass choice, La Rinconada.  

La Rinconada vineyard, located in the Santa Rita Hills AVA, has a good bit of sandy loam, and the clay lends a bit of power and structure to the Pinot, while the sand allows for drainge, keeping the grapes nice and healthy.  The Pacific breezes help to keep the ripeness in check and the acidity stays fresh.  Another thing I love about Gavin's wines is his deft touch with whole cluster fermentation, where the entire bunch of Pinot grapes is put into the tank.  This creates a more anaerobic fermentation which, similar to carbonic, lends a lifted aromatic to the wine, as well as an herbal savory quality from the ripe stems (the stems have to be ripe, not green for this to work).  I remember hearing once that Gavin had once won a contest in London where dozens of Pinot were tasted from all over the world, and that Domaine Dujac was even in that tasting.  Dujac is one of the most well-known families in Burgundy for utilizing whole cluster ferments to create silky, aromatic, beguiling Pinot Noir.

We are really excited to pour this wine By The Glass for dinner this weekend, so come see us Friday, Saturday or Sunday as always for a kind of ridiculous 'breakeven' glass pour.  $15/glass

SPECIAL WINE BY THE GLASS FOR DINNER

This week we are pouring a very special Barolo from Brovia, located in Northern Italy in the Piedmont region.  Brovia is located in the famed village of Castiglione Falleto in Barolo, known for creating structured wines with great finesse and capacity for long-aging.  Nebbiolo is certainly high on the list of my favorite grapes, and will be a dynamite pairing this weekend with the Steak Frites (especially with those brown butter mushrooms!) and the Chicken Confit.  Barolo is one of the great wines of Italy, come find out why!

DINNER TONIGHT | BRUNCH TOMORROW |
LUNCH MONDAY


Hi everyone, a quick note here that we are back today, and have a great menu for Dinner & Brunch this weekend.  We are so excited about DINNER and that people are coming out and coming back, tonight we have a great menu, and we are also pouring a pretty amazing wine by the glass.  From the lauded village of Morey-St-Denis in Burgundy, we are pouring 2012 Morey-St-Denis Rouge 2012. 

This wine absolutely everything you want from Red Burgundy, it still has the succulent primary fruit, something like black cherry, but underpinned by more savory secondary notes of forest earth, mushroom, roasted espresso bean.  When a wine has the best of both its youth and age, this is a special thing, and this is the place this wine is in right now.  I should also mention that 2012 is one of my favorite Burgundy vintages in recent times.  It is often described as a 'Classicist' vintage, because it was a vintage where ripeness had a fine counterbalance of freshness and acidity against the sun-dappled ripeness of the vintage.  Cooler vintages are rare these days, and 2012, at ten years old, are getting harder and harder to come by.   The grower here is named Christian Clerget, and they are an old domaine who works in a traditional manner, so great expressiveness of fruit and terroir.

Kings Court Brewing | Local Family-Run Brewery

Kings Court Brewing is located in a historic building on Cannon Street in Poughkeepsie, NY. The building was formerly home to King's Court Hotel in the mid-1900s, a place where many Bardavon performers would stay. In the early 1970s it was turned into King's Court Apartments and in 2013 the site was redeveloped and currently has apartments, a grand lobby, and commercial spaces, one of which is Kings Court Brewing.

Cortlandt, the head brewer, has won several awards from the Great American Beer Festival and a California State Fair and has been making a diverse, unique selection for the brewery since 2018.

We sat down to speak with co-owner, Caroline Bergelin, who also does the graphic design and helms the sales department for Kings Court. Caroline is also married to Cortlandt, making Kings Court a local, family-run business right here in Dutchess County.


-How did the idea for opening King's Court come to you and Cortlandt?

Cortlandt has over 10 years of craft brewing experience in other breweries in the Bay Area of California. He also received his Masters in Brewery from UC-Davis. I have a graduate design degree and 7 years of experience working in an engineering design field. With our combined skills we decided we would try out running our own brewery, so we loved the idea of working for ourselves. From brewing, website creation, can artwork, social media, brewery construction, etc, we have done it all ourselves.-


With a brewing background on the west coast, what made you choose the Hudson Valley to open your own space?

We are originally from the East Coast - I am from Brooklyn, NY and Cortlandt is from Glastonbury, CT. We had been living in the Bay Area for 6 years and just wanted to do something new. So we moved across the country and found the Hudson Valley to be an easy place to live and affordable for opening our own brewery.

Some local brewers I've spoken with are working towards (or are already) using 100% NYS ingredients. Do you work with any local farms?


Yes we do. We have used fruit ingredients from the Locust Grove Fruit Farm in Milton NY, we have used NY State malt from New York Craft Malt in Genesee County, and we have used barrels for our barrel aged beer from Coppersea Distilling near New Paltz, NY.


Where does your inspiration come from for new styles of beer?
We look at the current menu of beers that we have a fill in any gaps we have. We pride ourselves in carrying all styles of beer, so we just experiment with new styles. We also look at the season and project what will be needed, such as with fall arriving we now have an Oktoberfest and introduce more darker beer styles - Black Lager, Brown, Imperial Reds, etc.-


What has been your favorite beer to brew and drink?
A super popular beer we recently had was our Watermelon Wheat on Nitro! It was just a super refreshing beer made even better on Nitro gas.-



Have there been any challenges since opening up in 2018?
Covid certainly threw us for a loop, but it was a blessing in disguise. It gave us time to re-evaluate a lot of what we were doing and we changed a lot of our procedures to be more streamlined and cost efficient.


What has been one of your favorite parts of opening King's Court?
Meeting a lot more people and working for ourselves. It's great to wake up and have control of your own time.


Where do you see the future of brewing for yourself and the industry?
We plan to continue doing what we're doing - creating great beer and helping educate people about what quality beer is. We're also seeing a return to more traditional styles of beer and the public becoming more aware of what makes a beer good quality.


Kings Court Brewing is open Thursdays and Fridays 4-10pm, Saturdays 2-10pm, and 2-6pm Sundays.

We are so excited to announce that Homespun Foods is featured in the November 2022 issue of Hudson Valley Magazine, with a great write-up from writer Francesca Furey.  While there is no digital version of the story just yet, we put up the article on our Instagram, and you can view that HERE.  As soon as it is live, we will blast it out to you all.

We are really proud of our team, Chef Becky DeYoe has been doing something that I think is legitimately special with her team and her food here at Homespun, and the article talks about her background as a graduate of the Culinary Institute of America in Hyde Park, as well as her stints at the innovative Williamsburg mainstay, Diner, and Crown Heights' well-loved eatery Hunky Dory before joining us at Homespun.  She brings a wealth of experience, leadership, problem-solving and innovation to what we do every day here at the restaurant.  If you haven't been in for dinner yet, you have to taste and see what the team is putting out, it is really exceptional.  

Finally, a big thank you to Hudson Valley Magazine for supporting local restaurants!!  My mom and dad are going to love this, and my dad was wondering why he's never been mentioned in a  Homespun newsletter... so, hi Gerry!

WINE AT HOMESPUN | SPECIAL BY THE GLASS

This week we have a very special magnum of Marcel Lapierre Morgon 2020 to share by the glass for a break even price, just $15/glass.  Compare at $30+/glass in some of the city's best restaurants. 

Marcel Lapierre is one of Kermit Lynch's Gang of Four, a group of vignerons who eschewed industrial winemaking which sadly focused on using herbicides, pesticides and many of the corner-cutting techniques of modern winemaking, in favor of crafting traditional Beaujolais with minimal intervention, creating an experience that is lively and direct from the grape to the wine to the drinker, and moreover, the group carried on the cultural traditions of the region that had been passed down for generations.  These four winemakers, while they fought the uphill battle during the 1970s, 80s and 90s, have come to be seen as heroes and prophets who both preceded and catalyzed the Natural Wine Movement, which has taken over wine-lists of the best restaurants across the world and been a major disruptor in the more corporate winemaking and wine-selling world.   

This wine is an experience, lively strawberry notes that feel and taste alive as they dance on the palate giving way to a feeling of joy that only comes from great Beaujolais.    This is THE classic bistro wine, and will be absolutely delicious with tonight's menu, if you want to pretend you're in a quaint bistro somewhere far away, even if just for a few hours.

Dinner in Beacon Tonight

DINNER DINNER DINNER

The weather is getting cooler, the kids are back to school, and Homespun is still the place to unwind. 

We have a beautiful menu again this weekend, and we are keeping the restaurant open til 9pm these days.  A few new dishes this week, including Tomato Braised Beans, with fresh cranberry beans, stewed tomato, paprika-roasted carrots, swiss chard, carrot top & horseradish gremolata. 

For this dish, Chef Becky DeYoe says, "fresh cranberry beans are braised with roasted tomato, aromatics of garlic, onion, bay leaf, and fresh savory herbs (oregano, rosemary, thyme). Cranberry beans are a type of fresh shelling bean that are a pale white/ivory color with bright red or magenta streaks when raw; when cooked they become more even in color, almost like a pinto bean. The name “cranberry bean” really only refers to the color and has nothing to do with the flavor or presence of cranberries. They have a thin skin and a rich, creamy texture. Shelling beans are usually in peak season in the late summer and early fall; these in particular are from Norwich Meadows Farm, just to the east from the Finger Lakes."  She adds, "a gremolata is an Italian herb sauce/condiment traditionally made with parsley, lemon, and garlic. This version will have carrot tops in addition to some parsley, as well as fresh horseradish for an extra kick."  This dish is both vegan and gluten-free.

We also have a very an extra-special 'special' this evening, a Bone-In 24 ounce Grass Fed Ribeye Steak for 2.  Chef Becky says, "Ribeye is a super tender cut of beef known for its marbling, which gives it a lot of flavor, and is much fattier than other popular cuts like a strip or a filet mignon. It comes from the same muscle group as prime rib and tomahawk."  We are serving ours with anchovy butter, tomato salad, salsa verde, a large side of French Fries.

Ty Beatty worked hard the past few weeks on a new dessert too, a Chocolate & Strawberry Trifle w/ chocolate sponge, strawberry mousse, whipped cream and candied pistachios.  The cake is a super decadent dark chocolate cake, made with cocoa powder, eggs, oil, flour, sugar, and leaveners.  The mousse has puréed strawberry thickened with gelatin and whipped cream, and is a beautiful pink color, the whipped cream has a little citrus to it, and this is all topped off with candied pistachios for a little crunch.

ANNOUNCING -- NEW HOURS @ HOMESPUN

Starting this week, we will be staying open a little bit later as Dinner is starting to pick up some momentum, which is really exciting for us!   We are so grateful to all of our regulars for their support, and happy we can stay a bit later to accommodate later diners here in Beacon.

Last evening we did our very first wine class for the public, and it was a LOT of fun.  We tasted some amazing wines from the Loire Valley, and had a great conversation and got to know each other a little better.

Quick note today to come out to the BEER GARDEN at Homespun--  tonight we have a special sandwich, a regional Western New York Classic alla Buffalo, the Chicken Finger Sub

Only available for our Beer Garden on Monday evenings-- the blue cheese was made into a dressing, using Bayley Hazen blue from @jasperhillfarm with a bit mayonaisse, sour cream, worcestershire, lemon juice, and chives.  It is delicious and tempers the medium heat of the Frank's.

The Loire Valley produces some of the most profound wines in the world.

Appellations such as Savennières, Vouvray, & Anjou have beguiled white wine drinkers the world over for many generations with their chameleon-like expressions of Chenin Blanc, while places such as Chinon and Saumur-Champigny are hallowed ground for the Cabernet Franc grape.

Join us for this guided tasting of five wines from the Loire Valley with sommelier Joe Robitaille, and learn a little about the history, geology and techniques used to craft these fascinating wines in a fun, un-fussy setting.

The line up of wine promises to be outstanding, and will include a pour of a very special 24 year old Cabernet Franc: Couly-Dutheil’s Chinon ‘Clos de l’Olive’ 1998, along with an array of Chenin, Cabernet Franc and Pineau d'Aunis from top organic estates.

All of our classes are meant to be informative and fun, and we hope that everyone from beginner to expert will feel comfortable and find something new in each class.

Classes will be limited to ten seats, tickets are available for purchase HERE.

Each night we will have a house red and white to pour for the low price of $5/glass, available from 4pm to 6pm.    The choices are no slouch either, tonight we have PIerre Morey Bourgogne Aligoté 2016 for our white wine, this is no joke one of the great traditional domaines of the Côte de Beaune, and we will also be pouring Wild Arc's Blackbird, a blend of riesling and noiret for the red.  We only have one bottle of each to share, and then will switch it up after.

Dinner in Beacon | Weekend Brunch

Hi everyone,

Hope you all are ready for a nice weekend, seems like the temperature has dropped a few notches, so the backyard will return to being the cozy, awesome place we all know and love.

We also put in an extra air conditioner inside to help out our HVAC in the dining room, so staff and guests are feeling good with some respite from the heat.

Chef Becky has an amazing menu for you again this week, posted below.  Super summery and brimming with local product. The Corn Cake for dessert has been getting rave reviews, as well as the Ratatouille.  We all love a taste of the late summer bounty here in the Hudson Valley.  Product like this makes cooks and guests happy.

Also, keep an eye out next week, we will be announcing dates for Wine Classes here at Homespun that will be open to the public.  Prices will vary depending on the course and the wines.  We will do our best to keep wine fun and approachable, not the intimidating subject it is more many of us.

Plus, we are not messing around, we're going to taste some seriously great wines together.   If you want to learn about what makes Pinot Noir different from Sangiovese, if you want to take a deep dive on the regional wines of Italy, if you'd like to learn how to pair a wine at the table, or if you'd like to learn how to shop for value at a wine store, we got you!  

More on that next week, I am definitely excited to get this going here at the restaurant!

The Fine Maple Syrup of Laurel & Ash

When people ask what I do for work and I say I'm a sommelier, thoughts go strictly to wine. What it actually entails is much more than that. I deal with many aspects of service and play a huge supportive role on the floor. One of my favorite parts of the job is when I have opportunities like this past Wednesday...to go take a drive 30 minutes outside of Beacon to pick-up our Laurel & Ash maple order. To be able to visit a farm, learn where a product comes from, learn the story behind it, and then be able to share my knowledge, that is where my passion lies.

Ashley Ruprecht & Jeffrey Schad were looking to purchase a country home outside of the city in 2015 and found themselves in Holmes, NY with 52 acres of land and a surprising amount of maple trees. In 2018, Laurel & Ash was formed, a sustainable maple farm currently offering a range of maple syrups with more projects in the works. They both work full-time while doing this production on the side and I was fortunate to get a tour of their beautiful property, which they have plans to someday build out to have a space for events and guests.

They start tapping trees around January, so I was visiting in the off season, but it was still a sight to see with plenty of lines connecting the maple trees. Impressively, Jeff has drilled into all those trees in a matter of a few days this year with just one friend's help. From tapping a few trees their first year, they now have a whole intricate system with lines connecting the trees all leading to a sugarhouse where the sap collects in a stainless steel vat. The collection process is mostly done by gravity, with a little help of a vacuum. From one sugarhouse to the other, the syrup is then wood-fired to create the delicious tasting product we know and love. The final stage is bottling with a wax top, which is done from the production room they've made in the basement of their family home. There you will find a sample collection of each syrup they've done since the start.

It's a growing production with many more trees on their property untouched and ready. They are also experimenting with new products such as barrel aged maple vinegar which has been selling out fast when they visit Farmer's Markets, a project they've been working on for over a year. They need to scale production and hope to have it available for wholesale later this year or early 2023.

If you're wondering what the difference in color has to do with the syrup and production, you're not alone. I also had that question and it's a simple answer - the later in the season, the darker the syrup. This means when they start tapping they are getting a golden syrup and then it goes from amber, dark, very dark. What you get is a more concentrated, rich, and flavorful product as it gets later into the season.

We also are using their amber syrup in our maple lattes, which Ashley describes as rich, but not overpowering. It was a pleasure visiting the farm for the day and getting to know their production and we look forward to what's to come. This week we have a delicious menu for you, featuring some exciting new dishes that are fresh, delicious and summery to help cope with this crazy heat.  We are also pouring Marco de Bartoli's Zibibbo 2018 from Sicily by the glass for the next week or so.  This wine is a great example of a white wine that will brighten the flavors of recipes where you have a good amount of acidity in the dish.   A wine like this will accentuate the brightness a dish, lifting the herbal undertones, lending clarity and distinction between flavors.   A perfect pairing for three of our new dishes, Cucumber Melon Gazpacho, Shrimp Escabéche, and Panzanella.

New Dishes

For the Cucumber Melon Gazpacho, we take super ripe cantaloupes, and blend them up with cucumbers and coconut milk until the texture is smooth, and then this is  infused overnight with fresh basil and seasoned with lime juice.  It is served very cold, and is really refreshing and not too sweet.  This dish is also vegan and gluten free.  

For the Shrimp Escabéche, Chef Becky made a marinade with onions, garlic, peppercorns, bay leaf, rosemary, thyme, oregano, chilis, olive oil, honey, reduced white wine, and white wine vinegar.  The term Escabéche refers to seafood, meat, or vegetables that are marinated in a very acidic sauce, and it's common in Spanish and Latin American cuisines. It's similar in concept to ceviche, but typically the main ingredient is cooked first and then marinated, so it's used for both flavor and as a method of preservation.  The shrimp are grilled first and then put in the marinade while they're still hot, so it soaks up all the flavor.  The shrimp will be served over a paprika aioli, with lots of fresh cherry tomatoes, and garnished with pickled onions, pickled garlic scapes, fresh herbs and scallion.

This weekend, we also have a beautiful Panzanella Salad with a variety of heirloom tomatoes tossed with lots of olive oil, red wine vinegar, garlic, thinly sliced onions, basil, and fresh cucumbers, with the croutons going in last, to soak up all that goodness.  

For the mains, we brought the Ratatouille dish back from last week, it was a definite staff and staff-family or staff-adjacent favorite last week, tying together all those flavors of summer.  The base is crushed tomatoes that are cooked down with onion, fennel, garlic, capers, herbs, and wine. The eggplant, turnips, and squash were stirred in after, along with roasted red peppers, to create a bit of texture.  The squash was gently simmered in pickling liquid, so it has a sweet tang to it, but still has texture.  The dish is finished with an herb pistou (basically the French take on a pesto/salsa) - which has basil, parsley, oregano, and olive oil.  Served with grilled sourdough toasts for the strong dipping vibes.  If you like to eat seasonally, it's summer and you might need this.

For Dessert this weekend, we have Sweet Corn Cake as well as Butterscotch Pudding

The Sweet Corn Cake is served with blueberry sauce and whipped cream.  The cake is made with both fresh corn and cornmeal, along with lots of olive oil so it's super moist and delicious with lots of textures.  Our blueberry sauce is just blueberries that were poached in their own juices with a little bit of sugar and salt, and then the liquid was reduced, so it's a really nice pure blueberry flavor.   The Butterscotch Pudding is served with poached peaches and toasted almonds.  The pudding was made with caramelized brown sugar, then added to the milk & eggs, and finished with brown butter and whiskey.  It's super rich and toasty in flavor.  Peaches were macerated and then poached in their own liquid till just soft.  


Come on out, lots to share here with friends and family.  Many of these dishes are really nice to sit and share in our garden, so you don't have to commit to a full meal.  Come have a drink and catch up with the folks you love while you share a few plates.

Drowned Lands ~ Interview with Founder Mike Kraai

Drowned Lands is a farm brewery that opened in late 2020 and is located in Warwick, Hudson Valley's Black Dirt region on a 700-acre park with views of Wawayanda Creek and the Appalachian mountains. The building they are out of is over 100 years old, previously a rehabilitation center for young men from 1914 through the 70s and later becoming a correctional facility. They have completely renovated the space to make it bright, open, and welcoming which aligns with their slogan, "Slow Down, Stay Awhile."

They use their beer as a way to connect agriculture and the consumer. With many different styles of beers, it would be hard to not find one you like. While visiting a few weeks ago I was pleasantly surprised to see they have an interesting selection of low ABV beers. Mixed cultures, foeder aging, and attention to detail when it comes to their grains and hops, sets them apart. There's thoughtfulness behind each ingredient they use and I was excited to interview Founder, Mike Kraai and learn more about their production.

HB— What's your background in brewing and what led you to opening Drowned Lands?

MK— We opened the Drowned Lands as a destination brewery to connect people to the agriculture, the season, and the distinct area in which the beer is brewed to the liquid itself. 

 My personal background was in construction and then business, and finance.  I always had a passion for craft beer and was an avid home brewer for many years.  I truly enjoy the creative, artistic, and community component’s that come along with owning a brewery, so really it just felt like a natural fit for everything that I know and love.

 

HB— With opening in late 2020, can you share how business has been and how it's perhaps changed in the last couple of years?

MK— In general, opening the brewery was a massive challenge.   Years of planning, fundraising, and extensive construction.  We’re family owned, so it wasn’t like we had a big team or a lot of money to help make it happen, the whole thing was very grassroots, brick by brick.   We got through all of that, finally ready to open, and then Covid hit which was another big hurdle.  But overall it’s been great, and we’ve been super busy since the first day we opened.

 We’re fortunate to be located on over 3 acres, which backs up to a 700 acre park.  So despite the covid regulations, people we’re still able to enjoy the outdoor and open space.

 In terms of how things have changed, this summer is our first summer fully open with out any major restrictions so we get to do a lot more fun events, like music concerts, food pairings, and artist showcases, ect.  I’m really excited about our first beer festival on August 20th, called Wild Acres.  A celebration of thoughtful and well procured ales & lagers from 30 of the best brewers in the country.   Should be a really fun day!

 

HB— You're one of the few breweries I've seen talking about terroir. Can you share what prompted you to make the connection of land and beer?

 

MK— We love terroir! I think theirs a nice write up on our website sums it up best, so I will include that below.  But I will add, it’s just really fun from a production perspective to be able to offer something truly unique to the consumer.  There’s a lot of hazy IPA out there, and a lot taste very similar.  For us, it’s fun to continue to be innovative with recipes, and offer something the consumer has probably never tried before.  Our Foeder Pilsner for example, Rare Earth is brewed with 100% NY malt, NY Hops, Warwick Valley Water, and then Fermented and aged in an American Oak Foeder.  The beer is very crisp and refreshing like other lagers, but there’s this added flavor profile and aromas that make the beer really stand out (toasted marshmallow, oak, and local bread).

 

It’s also fun that Rare Earth will change slightly throughout the year depending on the ambient temperature, and how our water profile changes.  There’s a lot to this topic that is still to be explored which is really exciting for us.  All that being said, we don’t shy away from brewing a world class hazy IPA or a more traditional style of beer.

HB— Given that you are on a large property, do you grow most of your own ingredients or do you work with local farms too?

 

MK— We don’t grow any grains or fruits, at our brewery size that would take quite a bit of land and farming and is quite an undertaking.   But we’re fortunate to be in an extremely fertile region of the world, so we already feel Dirt Rich.  And we enjoy partnering with, and supporting local farmers.

 Might be adding a little orchard in the future, but we’re still so young and have some other higher priority projects at the moment.  Adding a premiere farm to table food program is a big project we’re currently working on.

 

HB— For those not familiar with Warwick's Black Dirt, can you share that history?

 

MK— Sure.  Long story here, but basically there is a huge concentration of the Warwick Valley that would flood year, after year.  It was untillable since the floods would ruin all the crops, so in the mid 1850s Farmers got together and re-routed the Wallkill River to prevent future flooding.  What was left behind was Black Dirt which is so dark in color because it’s nearly 90% organic matter, which is a result of thousands of years of flooding and being under water. 

 

HB— How would you say the Black Dirt affects the taste of the beers you're making?

 

MK— We harvest yeast from our property which is the primary driver of flavor in most beers, that’s a major factor.  The native mineral profile of the Warwick valley is on full display in all of our beers, also a very significant factor.   And lastly we often ferment in oak, either through foeders (we have 7!) or barrel aging.  Oak is porous so that microbes, humidity, and ambient temperatures all affect the flavor of the beer.    

 

HB— Where do you find inspiration when it comes to can designs and beer styles?

 

MK— Inspiration from nature for sure.  The beauty of the Warwick Valley is inspiring, and can be shown on full display throughout the design of our taproom, our cans, and layout of our property.  Similarly for developing beer styles, we love beers that represent the land on which they were brewed.

 

HB— Of the many styles of beer you've made thus far, which has been your favorite?

 

MK— Gather House is one of my personal favorites, the name represents the idea that our brewery was very much built as a bucolic destination for people to gather, Slow Down, and Stay Awhile.  The beer itself is soft and inviting, with a nice wheat forward complex flavor profile followed by Belgian yeast notes, coriander and orange peel.  It’s a beer that appeals to both a beer aficionado or a beer novice.    Rare Earth, Slow River, and Deep Terra are some other favorites definitely worth mentioning as well.

 

HB— Where do you see the future of brewing?

 

MK— For us, we intend to continue exploring the concept of terroir in beer.  My hope is that the consumer will come along for the journey.  Right now it seems like the ultra hoppy, heavily fruited, 5 adjunct stout, and high ABV beers are very mainstream. We recently brewed a 2.75% foeder table beer and aged it on fresh Lemon.  Not exactly a hype style, but I was pretty stoked when I saw it was our best seller the first two weekends after it was released.  

If you are looking to visit, Drowned Lands is currently open Thursday through Sunday each week, with food trucks and live music on the weekends. If you can't make it to Warwick, Homespun Foods is happy to have a rotating selection of their brews on our retail shelf and beer list.

Midsummer Evenings at Dia Beacon Café

This Saturday will be the final weekend that Dia Beacon will be open late til 8pm.  We will keep the café kitchen open til 6pm, and the patio will be open drinks at Dia til 7pm.  It is a great time to see the galleries in a relaxed fashion, without the big crowds.  And a bit of a Homespun PSA here, our wine list at Dia is really fun, loaded with natural gems at great prices.  For the folks who know about it, it is a great place to enjoy a bottle of wine with a friend.

This week we will feature another beer flight, this time from Drowned Lands in Warwick, NY.   We will be pouring a few new arrivals from Drowned Lands, plus a collaboration they did recently with Obercreek Brewing just down 9D from us here in Beacon.

Btw, the Monday Night Schnitzel Sandwich already has some loyal fans early on in its menu tenure.  You too can join this less than exclusive club who enjoys a good sandwich.  It's all about attainable goals.
