Top 5 Places To Eat in the Hudson Valley this December

We've been at it since June, and opening up for dinner, in a lot of ways, has felt like opening a brand new restaurant.  Developing a crowd, working with new farms, finding new regulars, developing dishes and watching the word get out into the community, it has been a process that has moved in fits and starts, but it has been exciting.  Like any new restaurant.  But now, it feels really good, especially during December when business slows down here in Beacon, to see our work recognized in Chronogram, a magazine that we all really love and respect.

Radio-Coteau | Pinot Noir ‘Savoy’ 2016
BY THE GLASS THIS WEEK FOR DINNER

Radio-Coteau, located in Sebastopol, California, puts out incredibly delicious Coastal California wines, and tonight, we are featuring their 2016 Pinot Noir, a cuvée called 'Savoy'.  

'Radio-Coteau' is a French colloquialism for 'word of mouth', literally, it translates to 'Blasting from the Hillside,' a saying that originates in the Northern Rhône, one of our favorite regions here at Homespun.   The 'Savoy' wine that we will be pouring this weekend, comes from a gorgeous hillside vineyard in coastal Anderson Valley in Northern California.  The cool air of the Pacific and the northerly latitude help to give this wine a generous lift and balance, without sacrificing that sun-soaked California ripeness we all know and love.  The winery has been working with this organically farmed vineyard for nearly 20 years, and always harvests at night, to help retain the freshness of the whole-cluster berries that will spend 16 months in barrel before bottling.  The maritime influence, the vineyard exposition, the whole-cluster ferment, all play into why I love this wine so much, but their focus goes beyond just the finished product in the glass.  Their intention on the five following elements of the vineyard make them very intriguing to me, and put their wines to a different level.

1.  Biodiversity -- Not just in terms of Flora, but also Fauna, here we find goats, cows, sheep, and a commitment to leave over 10% of vineyard acreage wild to encourage migratory passageways for animals.

2.  Pollinator and Hedgerow Plantings-- Various pollinators and hedgerows were planted to provide vital pollen sources and nesting habitats for native bees and beneficial insects, as well as birds and other wildlife.

3.  Cover Cropping -- Grasses and legumes planted in the fall add important organic matter to the soil, while helping to sustain soil microbes and prevent topsoil loss from erosion.

4.  Habitat Restoration -- Radio-Coteau uses goats to help remove non-native species, nature's clean-up crew.  They also plant native oaks and perennial shrubs to help encourage native plants.

5.  Wildlife Structures -- Owl boxes and raptor perches were constructed to control the gopher population, with bat and bluebird boxes added to reduce insect outbreaks. Native bee boxes help pollinate the many fruit trees, flowering perennials, and annual plants around the estate.  All of this helps a vineyard work naturally and to avoid using harmful pesticides which are all too common in viticulture.  

We are really excited to be pouring these wines this weekend, come get a glass of one of California's best!

Also, we should mention, this wine would cost $30-$35 a glass in NYC if anyone was pouring it, so come try it at Homespun for $15/glass, it's a mega-deal!

Every Sunday, Homespun will be doing BYOB Sundays, where you can bring a bottle of wine from home to enjoy here at Homespun for no additional charge with your meal.  This way you can share a great bottle with friends who you like enough to drink wine with, but not enough to clean up after ;)
